Yay for Pizza!!! 🍕

I love pizza! How about you? But, I don’t always love how I feel after eating it… all of the heavy carbs, salt, grease from the cheese and crust, etc.
So, I gave this recipe a whirl. And, much to my surprise, it actually tasted like real pizza! It’s flavorful and satisfying, and the ‘crust’ had me believing that I was eating pizza!

Cauliflower Crust Pizza

YIELD: 2-4 Servings
Prep Time: 20 minutes
Cook Time: 40 minutes
Total Time: 1 hour

INGREDIENTS:

1 large head of cauliflower (if using frozen, riced cauliflower, make sure to squeeze out excess water, or, buy fresh riced cauliflower in the produce section)
1 egg, beaten
1/3-cup soft goat cheese (may substitute goat cheese with ricotta, cream cheese or mascarpone)
½ tsp. Italian seasoning
½ tsp. garlic powder
Pinch of salt
½ cup marinara sauce
ž cup shredded mozzarella cheese (I used BelGioioso Fresh Mozzarella)

DIRECTIONS:

Pre heat your oven to 400.

Line a rimmed baking sheet with a silpat mat or some parchment paper (NOT wax paper).

Break up your cauliflower and pulse it in a food processor, you may have to do this in batches. The goal is for it to be small, fine, rice like texture. Continue until all of your cauliflower has been ‘riced’ (you want to have 4-cups of cauliflower rice when you are done).

Bring a couple inches of water to a boil in a large pot. Add in the cauliflower and cook for 5 minutes or until the cauliflower is nice and tender. Strain in a fine mesh strainer and place all of the strained cauliflower onto a clean dishtowel. Pull up the sides of the towel and squeeze out as much water as you can from the cauliflower. This step is ESSENTIAL to your cauliflower sticking together so be sure that you get out as much water as possible and don’t skip this step!

Transfer the cauliflower to a large bowl and add in beaten egg, goat cheese, Italian seasoning, garlic powder, and a pinch of salt. Combine everything together (I find the easiest way to do this is with my hands).

Transfer to your baking sheet and form the dough. I like to make mine into a rectangle but you can do whatever shape you like. Remember to make the edges a little higher than the rest to create the effect of crust.

Pop it in oven and bake for 30 minutes.

Top with pizza sauce and cheese and put back in oven for 5-10 minutes or until the cheese has melted.

Cool and enjoy!

An easy-to-make, delicious, nutritious salad!

Ingredients for one serving:
1 tomato, diced
1 small avocado, cubed
A few Kalamata olives, pitted
A couple Tbsp. Feta cheese with basil
2 Tbsp fresh squeezed lemon juice
1 Tbsp extra virgin olive oil
Himalayan salt and black pepper, to taste
Peperoncini

*Additional add-ins:
chopped spinach and/or kale
cucumber, chopped
1/2 cup cooked quinoa
boiled egg

Change The Way You Think, Change Your Life

I want to change the world for Jesus, so daily, I have to change my mind. I can’t go by what I feel. I must put on a winning, overcoming, champion-believing, thankful and grateful mindset.

THIS is where victors or victims are made — it’s in the battlefield that’s taking place in the way we think.

If you think down, you’ll go down. If you think up, you’ll come up.
The way you think about yourself, the way you think about your body is the way you’ll treat it. See, it’s not your limits that are holding you back from being healthy and fit, it’s the way you think about yourself. And, Jesus gives you a new mind. He makes you new, heals you from the inside-out, and gives you a new perspective and way of thinking. He helps you to believe in yourself, because His Spirit relentlessly whispers to yours that He is for you, He believes in you. His love changes everything.

GOD SAYS YOU ARE FEARFULLY AND WONDERFULLY MADE! And, He has NOT given you a spirit of fear or timidity or mediocrity, but of POWER, LOVE and a SOUND, POWERFUL MIND. (2 Timothy 1:7). Now, CHOOSE to believe it. Choose to have faith. Choose Jesus, and put on the CHAMPION mind of Christ!

CRUSH SOME GOALS without excuses today.
God says you can. (Philippians 4:13). So, believe it and MOVE forward, Champion!

Don’t Give Up!

Keep going! God isn’t finished with you yet.
He will bring it to pass! Don’t give up!
Walk. By. Faith.
Do. The. Work.

Do the good work that God has called you to do. Be your best self for the sake of Christ and the Gospel. Whatever you do, do it with all of your heart for JESUS! It may take longer than you thought. You may feel tired and worn. But, know that God is working it out as you surrender to His love and follow hard after Him. Trust Him and His perfect timing! You’re going to make it to the other side! HE HAS YOU!

And I am certain that God, who began the good work within you, will continue his work until it is finally finished on the day when Christ Jesus returns. Philippians 1:6

You need to persevere so that when you have done the will of God, you will receive what He has promised.

I am a Champion for Jesus

I am a Champion for Jesus. Hear me roar! … This poured out of my heart this morning.

I believe it’s true of me AND you!
See, it’s this Savior Jesus who died for us so that we may live fully alive and bring glory to His Name – not just after this life, but right now, today!
• Today, let us not miss the opportunities to believe God and to walk with Him courageously, boldly, step by step, in His love! Our giants are not too giant for Him! He will give us hope, help, deliverance and victory!
